Apple glazed vegetables with celeriac
A stunning mixture of favourite winter vegetables.
canola oil spray
3 cups prepared vegetables sliced into golf ball sized chunks e.g. yams, parsnips, swede
1 cup chunks celeriac, prepared as above
½ cup apple glaze
chopped fresh parsley for garnish
Preheat oven to 200°C.
Spray a baking dish with oil then add vegetables.
Drizzle over the glaze.
Bake in preheated oven for 35-40 minutes or until cooked.
Baste several times during cooking.
Garnish with chopped parsley.
Variation: Use vanilla or maple syrup in place of the apple glaze.
