Add watercress/puha just before the end of cooking to complete this great New Zealand dish.
1 Tbsp canola oil
500g stewing beef or mutton, fat trimmed and cut into 5cm chunks
2 onions, chopped
3 carrots, chopped
1 kumara, chopped
2 potatoes, chopped
1 Tbsp vinegar
4 cups watercress/ puha
Heat oil in a large pot.
Add meat and brown on each side.
Add onions and carrots and continue to cook.
Add remaining ingredients except watercress.
Cover with cold water and bring to the boil.
Skim fat off the surface occasionally.
Reduce heat and simmer until meat is tender and vegetables are cooked.
Add watercress/puha just before the end of cooking.
