Super broccoli with crunchy apple and red onion - a tasty combo.


Broccoli and red onion salad


Serves 2-3

2 red apples, cored, quartered and thinly sliced
½ Tbsp lemon juice in ¼ cup water
1 red onion, peeled and sliced
2-3 Tbsp lite mayo
1 head broccoli, cut into florets and blanched
½-1 Tbsp chopped coriander or Italian parsley


Place apples and lemon water in a bowl. Leave until ready to assemble salad.
Drain, add onion and mayo and toss to mix.
Place broccoli in a serving dish and top with onion and apple mixture.
Serve garnished with coriander.
