Caramelised onion and kumara mash
This combination of smooth and creamy kumara with succulent onions is totally mouth-watering.
1 large onion, peeled and finely chopped
2 cloves garlic, peeled and finely chopped
2 Tbsp olive oil
4 large kumara (900g), peeled and sliced into even-sized pieces
¼ cup lite sour cream
¼-½ cup milk
freshly ground black pepper, to taste
fresh coriander sprigs, for garnish
Place onion, garlic and oil in a frying pan.
Cover and simmer on a very low heat for 25-35 minutes or until onions are succulent and caramelised.
Boil kumara in a little water for 25-35 minutes or until soft. Drain.
Add sour cream and milk, mash to a smooth consistency adding more milk if necessary.
Stir in onion and garlic mixture.
Add salt and pepper, garnish with coriander and serve.
