This is a delicious and different way to serve carrots and is great for tapas or as part of the dinner plate.
4 carrots, peeled and sliced lengthways
1 Tbsp canola oil
1 tsp curry powder
1 onion, peeled and finely chopped
Heat a little water in a frying pan.
Add carrot slices and cook until just tender. Drain and place in tapas dish.
While the carrots are cooking, heat the oil in a heavy-based pan
Add curry powder and onion and cook, stirring, until onion is just cooked.
Arrange over carrots and serve.
