Cavolo nero pasta salad
A quick, delicious salad that can be added to the lunch box.
4-5 leaves cavolo nero
4-6 cups cooked pasta spirals
1 Tbsp avocado oil
freshly ground black pepper, to taste
30g Parmesan cheese, sliced or grated
Remove any tough stalks from cavolo nero leaves. Wash and slice into pieces.
Place oil in a large heavy-based saucepan. Add cooked pasta, cavolo nero and pepper. Quickly stir fry until cavolo nero is wilted.
Place in serving dish and top with Parmesan cheese.
