Celery and chilli salad with turkey

This chilled salad is superb for family dinners and to take to pot luck dinners.

Celery and chilli salad with turkey

Ingredients

Serves 4

500g turkey breast
1 Tbsp canola oil
2 cloves garlic, peeled and crushed
pinch salt
freshly ground black pepper, to taste

Salad:
½ cup green olives, pitted and chopped
1 Tbsp diced red capsicum
1 orange, peeled, de-pithed and diced
4 stalks celery, finely chopped
2 tsp baby capers
2 red chillis, deseeded and finely chopped
1 tsp grated orange rind
2 cloves garlic, peeled and crushed
¼ cup finely chopped parsley
¼ cup canola oil
2 Tbsp white vinegar
pinch salt
freshly ground black pepper, to taste

Method

Slice turkey breast into strips. Place in a shallow dish.
Mix oil, garlic, salt and pepper together and pour over the turkey.
Cover and refrigerate overnight.

Salad:
Place all ingredients in a bowl and stir to combine.
Cover with plastic wrap and leave in refrigerator.

Preheat a ridged grill pan.
Cook turkey for 3-4 minutes on each side or until cooked through and golden brown.
Serve with salad.
