Celery and orzo salad
A delicious and tasty salad, ideal to take for a pot luck. Cook double tonight and take in the lunchbox tomorrow.
2 stalks celery, finely diced
2 cups cooked orzo pasta
½ cup green olives, pitted and chopped
1 orange, peeled, de-pithed and segmented
1 tsp grated orange rind
1-2 cloves garlic, peeled and crushed
¼ cup chopped parsley
¼ cup canola oil
1 Tbsp white vinegar
2 stalks celery, sliced
Place celery and orzo in a bowl. Add olives, orange, and orange rind.
Mix garlic, parsley, oil and vinegar together in a screw top jar. Shake to combine and pour over salad
Toss through celery slices.
Cover and chill until ready to serve.
