Chilli and tomato chunky chutney
Serve this chutney with cheese and crackers or add to silverbeet and noodles.
Makes about 4 jars
1 cup jam sugar
1 cup cider vinegar
2-3 chillies, deseeded and finely chopped
2 cups chopped tomatoes
3 red capsicums, deseeded and diced
2 onions, peeled and chopped
1 cup cherry tomatoes, halved
1 tsp salt
Place sugar and vinegar in a heavy-based saucepan. Heat, and stir to dissolve.
Add all the other ingredients except the cherry tomatoes and salt. Bring to the boil and simmer for about 30 minutes.
Add cherry tomatoes and salt, bring to the boil, reduce heat and simmer for a further 5 minutes.
Pour into hot jars and seal.
