Citrus carrots and courgettes
The orange rind and juice give this carrot and courgette stir fry added flavour.
1 Tbsp canola oil
3 carrots, sliced
3 courgettes, finely sliced into matchsticks
1 Tbsp grated orange rind
2 Tbsp orange juice
freshly ground black pepper, to taste
Heat oil in a large heavy-based frying pan or wok.
Add carrots and stir fry for 4-5 minutes or until carrot is just tender.
Add courgettes and stir fry for a further 1-2 minutes.
Add orange rind and juice. Mix well.
Place in serving dish, add pepper and serve.
