Cooking globe artichokes

Globe artichokes are easy to cook and delicious. Pull the petals off the cooked artichokes and dip the flesh end in vinaigrette and enjoy!

Ingredients

Serves 2

2 globe artichokes
2 cups water
pinch salt
slice of lemon
2-3 Tbsp lemon vinaigrette

Method

Trim stalks and any old leaves from the artichokes.
Place water in a saucepan, add salt and lemon, and bring to the boil.
Add artichokes, return to the boil, reduce heat and simmer for 25-40 minutes, or until a leaf comes away from the stalk when gently pulled. Larger artichokes take longer than small ones.
Remove from water and turn the artichokes upside down to drain.
Serve with lemon vinaigrette. Pull off the leaves, dip the flesh end in vinaigrette, pull through teeth to remove the soft section, then discard remaining petal.

Variation: Instead of adding salt to the boiling water, add a bay leaf and a clove of garlic with the lemon slice.
