Courgette and sprout stir fry
The sprouts in this wonderfully easy stir fry give a lovely nutty flavour and texture.
2 Tbsp canola oil
2 bunches asparagus, sliced into bite-sized lengths
4-5 small courgettes, sliced in chunky slices
1 cup adzuki or crunchy combo sprouts
Heat oil in a heavy-based frying pan, or wok.
Stir fry asparagus for 1 minute.
Add courgettes and stir fry until just tender.
Add sprouts, toss and serve.
Variation: Use green beans in place of asparagus.
