Courgettes with tarragon
Delicious served with lamb or chicken.
2-3 Tbsp canola oil
500g courgettes, sliced into ½ cm slices
2 Tbsp chopped parsley or tarragon
1 Tbsp lemon juice
freshly ground black pepper, to taste
Heat oil in a heavy-based frying pan.
Add courgettes and stir fry for 2-3 minutes until they are just tender.
Stir in parsley or tarragon, lemon juice, salt and pepper
