This colourful salad is as delicious as it looks.
2 beetroot, cooked, peeled and diced
5 radishes, quartered
4 tomatoes, quartered
1 Tbsp olive oil
1 red onion, halved and sliced
freshly ground black pepper, to taste
Mix all ingredients together in a bowl. Chill.
Place in serving dish and serve.
