Cucumber, celery and red lettuce
Salads don't have to be complicated to taste and look delicious.
2-3 cups red lettuce leaves e.g. red oak
1 telegraph cucumber, sliced into ribbons
1 stalk celery, thinly sliced into ribbons
2 Tbsp chopped parsley or coriander
2-3 Tbsp vinaigrette e.g. Thai style or lime and coriander
Make a bed of lettuce leaves. Layer with cucumber ribbons.
Top with celery and herbs.
Drizzle with vinaigrette.
Tip: How the vegetables are prepared can make a great impact. A good quality peeler or cheese slicer can transform the ordinary into something special. Some peelers also shred. Alternatively use a very sharp knife.
