Daikon, lettuce and lamb rolls
Use as part of a tapas selection or increase this recipe for a tasty family dish.
Daikon is also known as Japanese, or white radish.
1 daikon radish, peeled and thinly sliced lengthwise into 12 strips
½ cup beetroot relish
12 slices cooked lamb
1 cup salad leaves
additional salad leaves for serving
Lay daikon slices on a board and spread with beetroot relish.
Place lamb and salad leaves at one end and start rolling up from this end.
Secure with a toothpick.
Serve on remaining salad leaves.
