Dill and coriander marinade

Keep a jar of this in the fridge and use as a marinade for sliced cucumber or sliced red onion.

Dill and coriander marinade


Makes about 1 cup

1 cup rice vinegar
½ cup brown sugar
1 Tbsp fish sauce
2 Tbsp finely chopped dill
2 Tbsp finely chopped coriander


Place vinegar and sugar in a small saucepan and bring to the boil. Reduce heat and simmer for 5 minutes.
Add fish sauce, remove from the heat and cool.
Add herbs and transfer to a screw top jar.
Store in refrigerator. Shake well before using.

Serving suggestion: Place ½ telegraph cucumber, halved, deseeded and sliced, or 1 red onion, sliced in a bowl, pour marinade over, leave for 5 minutes and serve.
