An impressive and delicious dessert.
½ cup caster sugar
½ cup water
6-8 stalks rhubarb, trimmed and sliced into 1-2 cm lengths
4-6 meringue nests
4-6 Tbsp spreadable cream cheese
Combine sugar and water in a saucepan. Heat to dissolve sugar.
Add rhubarb and bring to the boil. Reduce heat and simmer for about 5 minutes. Cool.
Divide most of rhubarb amongst 4-6 bowls. Retain rest to put on top of the meringue.
Spread the cream cheese into the meringue nests and place on top of rhubarb.
Spoon remaining rhubarb over the top and serve.
Variation: Top with some dry roasted slithered almonds or hazelnuts.
