French onion soup
It is hard to go past the taste and simplicity of this French classic. Rediscover how delicious this soup is, and how easy it is to make.
1 Tbsp canola oil
6 large onions, peeled and sliced
2 Tbsp flour
1 tsp sugar
6 cups beef or vegetable stock
Heat a heavy-based saucepan and add oil.
Add onions and stir fry for 4-5 minutes or until transparent.
Add flour and sugar, mix well.
Add stock and simmer gently for 10-15 minutes or until onion is totally softened.
Serve with crusty bread or toast.
Variation: Sprinkle grated cheese on toast and grill. Slice into small squares and serve with soup.
