Garlic greens stir fry
The vegetables used in this recipe are interchangeable - use whatever is in season or try new ones.
2 Tbsp canola oil
3-4 cloves garlic, peeled and finely chopped
6 cups assorted green vegetables (e.g. sliced courgettes, leeks, asparagus, beans etc)
2 Tbsp runny honey
2 Tbsp white wine vinegar
Heat a heavy-based frying pan and add oil.
Add garlic and vegetables and stir fry for 8-10 minutes or until tender but still slightly crisp.
Add honey and vinegar and toss well to make sure vegetables are well coated and the honey has melted.
