Ginger and lime pumpkin mash
This tastes stunning. The lime juice and ginger give great tasting results.
1.2kg wedge of pumpkin, seeds removed
3 Tbsp lite olive oil
2 tsp lime juice
1 tsp grated ginger
¼ cup sour cream
¼-½ cup milk
freshly ground black pepper, to taste
Place pumpkin in the microwave and cook on high power for 8-10 minutes or until pumpkin is soft and tender.
Cool until pumpkin can be handled. Remove skin.
Place pumpkin, oil, lime juice, ginger, sour cream and ¼ cup milk into a saucepan.
Mash to a smooth consistency adding more milk if necessary.
Add salt and pepper and reheat to steaming hot. Serve.
