Succulent vegetables lightly coated in a ginger and honey sauce taste amazing.
2 Tbsp canola oil
6 cups prepared vegetables e.g. cauliflower and broccoli florets, slices of green capsicum
1 Tbsp finely chopped ginger
2 Tbsp runny honey
2 Tbsp white wine vinegar
Heat a heavy-based frying pan to hot. Add oil, then vegetables and ginger. Stir fry for 8-10 minutes or until tender but still slightly crisp.
Add honey and vinegar and toss well to make sure vegetables are well coated and the honey has melted.
