Glazed chilli and mint lamb

Delicious on the barbecue, or a new twist on a favourite roast.

Glazed chilli and mint lamb


Serves 6-8

1 boned out leg of lamb, 1.5 – 2 kg
¼ cup maple syrup
2 red chilli, deseeded and chopped
2 Tbsp finely chopped mint leaves


Preheat oven to 180°C.
Place lamb in a baking dish.
Mix maple syrup, chilli and mint leaves together and spread over the lamb.
Cook lamb in preheated oven for about 40-60 minutes, or until cooked as required (as a guide: 15-20 minutes per 500g for medium-rare).
Rest, covered with foil, for 10-15 minutes before slicing.
