Grilled herby tomatoes
This is a quick and easy way to serve tomatoes. Enjoy at breakfast, lunch or dinner.
4 medium tomatoes
1-2 Tbsp finely chopped basil, parsley, thyme or rosemary leaves
freshly ground black pepper, to taste
canola oil spray
Preheat oven to 180°C, or preheat grill.
Halve tomatoes, place cut side up in a baking dish.
Sprinkle with herbs and pepper. Spray with oil.
Grill under preheated grill for 5-8 minutes or until cooked. Serve.
Before cooking, place an olive half in the centre of each tomato.
Sprinkle tomato halves with Parmesan cheese before grilling.
