Hangi in the oven or microwave
4 large cabbage leaves
½ kumara, peeled and diced
1 potato, peeled and diced
1 mutton chop, meat removed from bone and sliced into 4 portions
1 chicken thigh, sliced into 4
pinch of salt
pepper to taste
4 Tbsp chopped parsley
Preheat oven to 180°C.
Bring a pan of water to the boil.
Remove the tough stalk from each cabbage leaf.
Place each leaf in the water and simmer until just wilted. Remove, drain and cool.
Spread out on a board. Arrange the kumara, potato, sliced meat and chicken in the middle. Sprinkle with salt and pepper, fold over the sides and roll up.
Wrap in aluminium foil for cooking in the oven or plastic wrap for cooking in the microwave. Make sure the parcels are secure so the meat and chicken steam.
Open parcels, sprinkle with chopped parsley and serve.
To cook in the oven: place in preheated oven and bake for about 30 minutes, or until cooked.
To cook in the microwave: place in the microwave and cook on high for 3 minutes, check and if necessary cook another 1-2 minutes.
