Harissa or pesto mini muffins

Great for entertaining; split in half and sandwich together with lite cream cheese.

Harissa or pesto mini muffins

Ingredients

Makes 24

canola oil spray
1 egg
1 cup milk
50 ml canola oil
1-2 Tbsp harissa paste [see our recipe] or pesto [see our recipe]
2 cups flour
2 tsp baking powder
lite cream cheese for serving

Method

Preheat oven to 200°C.
Spray 24 mini muffin pans with oil spray.
Beat egg and milk together in a bowl. Add oil and harissa paste or pesto, and mix.
Sift flour and baking powder together into another large bowl.
Make a well in the centre of this mixture and pour in liquid ingredients. Stir until just combined.
Spoon mixture into mini muffin pans and bake in preheated oven for about 10 minutes or until golden.
To serve, split and spread with lite cream cheese.
