The taste of fresh herbs is a great addition to vinegar.
Makes 4 x 250 ml bottles
10-12 sprigs herbs, e.g. rosemary, tarragon, sage
1 L wine vinegar or white vinegar
Place herbs in 4 x 250ml sterilised, clean bottles.
Add vinegar. Place lid on bottle.
Leave in a warm place for two or three weeks. Shake the bottle once each day.
To use, strain and pour into a clean bottle. Add fresh herbs if desired. Keep out of sunlight.
