Honey beef with courgettes
An easy to make and visually effective dish.
500g beef stir fry
60 ml honey soy dressing
4-6 courgettes, deseeded and spiralized, raw or blanched
½ red capsicum, deseeded and finely sliced, for garnish
Heat a heavy-based frying pan. Add the beef in batches and stir fry until cooked.
Stir through the honey soy dressing.
Serve surrounded by courgette spirals and garnished with red capsicum.
