Honey roasted yams

A yummy winter dish.

Honey roasted yams

Serves 4

500g yams
2 Tbsp canola oil
2 Tbsp runny honey
1 Tbsp balsamic vinegar

Preheat oven to 180°C.
Slice yams in half if necessary.
Toss all ingredients together in a baking dish until yams are well coated.
Bake in preheated oven for 30-35 minutes, or until tender.
Place in serving dish and serve hot.
Alternatively, allow to cool, then toss through leafy greens to make a salad.

Variations:
Use swedes, parsnips or turnips.
Add a little crushed pineapple to the finished dish.
