Hot potato salad

A great recipe to serve with char grilled fish, and especially good with baked sausages.

Hot potato salad

Ingredients

Serves 4

500g small boiling potatoes
pinch salt
2 Tbsp chopped parsley
1 large shallot, peeled and finely sliced
¼ cup olive oil

Method

Place potatoes into a saucepan with a lid.
Add enough cold water to just cover the potatoes. Season to taste.
Place the lid on the saucepan and bring to the boil.
Once the potatoes come to the boil, reduce heat and simmer gently. Vigorous boiling will cause most potatoes to break up.
Drain and place in serving dish. Keep hot.
Place parsley, shallots and extra virgin olive oil in a small bowl. Mix well, pour over the hot potatoes and toss gently. Serve.
