Kale, potato and chorizo soup

Ingredients

Serves 3-4

1 Tbsp canola oil
3 cloves garlic, peeled and diced
½ leek, thinly sliced
2 boiling or new potatoes, diced
1 chorizo sausage, sliced
2 large tomatoes, peeled and chopped
1 L boiling water
4 stalks kale, thinly sliced
pinch salt
freshly ground black pepper, to taste

Method

Heat oil in a large heavy-based saucepan, add garlic and cook until it starts to become golden. Remove and keep warm.
Place leeks in the saucepan and cook, stirring for 2 -3 minutes.
Return garlic to saucepan, add potatoes, chorizo, tomatoes and water. Heat to boiling, reduce heat and simmer for about 15 minutes, or until potatoes are cooked.
Stir in kale, return to the boil, add salt and pepper and remove from heat. Serve.
