Kumara and Date Loaf
A healthy twist on the traditional date loaf.
1 loaf (16 portions)
1 1/2 cups cooked, mashed kumara
1/2 cup canola oil
1/2 cup plain yoghurt
1 tsp vanilla extract
½ cup chopped dates
1 3/4 cups wholemeal flour
1/2 cup brown sugar
2 tsp baking soda
1 Tbsp mixed spice
Preheat oven to 180°C.
Grease and line one loaf tin with baking paper.
Add the eggs, oil, yoghurt and vanilla to the cooled kumara, and whisk until combined.
Mix in the chopped dates.
In a large mixing bowl, combine the flour, sugar, baking soda and mixed spice.
Add the wet ingredients into the dry and mix to combine.
Pour the batter into the loaf tin.
Bake for approximately 40-45 minutes or until cooked through and a dark golden brown.
