Kumara and mint salad
Mint and kumara are a delicious duo.
2 large kumara, cooked and diced
freshly ground black pepper, to taste
½ cup chopped mint
1 Tbsp canola oil or lite olive oil
4 sprigs fresh mint
Place kumara in a bowl.
Add pepper, mint and oil.
Toss gently and place into a serving dish.
Serve garnished with mint sprigs.
