Kumara and pork boil up

A one pot dish with traditional flavours – serve with crusty bread – ideal to dip in the flavoursome liquid.

Kumara and pork boil up

Serves 4

500g lean pork ribs
1 clove garlic, peeled and chopped
1 Tbsp lemon pepper
pinch salt
4 carrots, chopped
4 kumara, chopped
8 L water
4 stalks silverbeet, chopped

Place pork ribs, garlic, lemon pepper, salt, carrots, kumara and water into a large saucepan.
Bring to the boil, reduce heat and simmer for 30-40 minutes, until vegetables are tender.
Add the silverbeet and simmer until tender.
Serve in bowls.
