Kumara and spinach bake

Plan your lunch – prepare double so you have lunch ready to heat at work the next day.

Kumara and spinach bake


Serves 2

2-3 kumara, diced
3 cups shredded or baby spinach
¼ cup pine nuts
¼-½ cup sliced Parmesan cheese
chopped parsley, for garnish



Preheat oven to 180°C.
Spray 2 ovenproof dishes with oil.
Place the kumara and spinach in a bowl and mix.
Distribute between dishes.
Sprinkle over the Parmesan cheese and pine nuts.
Place in preheated oven and bake until the kumara is soft when tested with a skewer and the cheese has melted and is golden.
Serve garnished with parsley.
