Leeks with cheesy croutons
A tasty side dish or serve with grilled bacon or sausage and steamed carrots for a lunch or dinner dish.
2 leeks, sliced
1 cup garlic croutons
1 cup grated cheese
sprigs of parsley or coriander
Fill a large pot with water, bring to the boil, add salt and leeks.
Return to the boil, reduce heat and simmer for 5-10 minutes or until leeks are just tender. Drain and place in a baking dish.
Sprinkle with croutons and cheese. Place under preheated grill until cheese melts.
Serve garnished with parsley or coriander
