Marble is a wonderful comfort food for the winter - or any time you want a quick and delicious snack.
2 carrots, peeled and sliced into chunks
2 parsnips, peeled and sliced into chunks
1 tsp margarine
freshly ground black pepper, to taste
sprigs of coriander or Italian parsley for garnish
Place carrots and parsnips into a pan of water, bring to the boil, reduce heat and simmer until tender. Drain.
Mash, add margarine and salt and pepper. Serve garnished with coriander or Italian parsley.
Variation: Use swede in place of the carrot or parsnip.
