Mini muffins with tomato

These delicious mini muffins are perfect for putting in the lunch box.

Mini muffins with tomato

Ingredients

Makes 24 mini muffins

1 egg
1 cup milk
50 ml canola oil
2-3 Tbsp vegetable relish
2 cups flour
2 tsp baking powder
1-2 tomatoes, quartered and sliced, for garnish

Method

Preheat oven to 200°C.
Spray 24 mini muffin pans with a little oil.
Beat egg and milk together in a bowl. Add oil and relish.
Sift flour and baking powder together into another large bowl and mix.
Make a well in the centre of this mixture and pour in liquid ingredients. Stir until just combined.
Spoon mixture into mini muffin pans and top with a slice of tomato.
Bake in preheated oven for about 10 minutes or until golden.
