Pasta with tomato and capsicum sauce
Fresh pasta sauce is delicious and easy to make.
Serves 4 as a main meal
1 Tbsp canola oil
½ red or brown onion, sliced
4 medium tomatoes, chopped
1 red capsicum, deseeded and chopped
¼ cup tomato sauce
freshly ground white pepper, to taste
4-8 cups cooked, drained, hot pasta
Heat oil in a heavy-based saucepan. Add onion and cook until transparent.
Add tomatoes and capsicums, and simmer for 2-3 minutes.
Add tomato sauce, salt and pepper.
Add a little water if sauce is too thick and bring to the boil, reduce heat and cook for a further 4-6 minutes until steaming hot.
Serve over the cooked pasta.
