Poached eggs on parsley subs
Parsley with egg on toast makes a quick and tasty breakfast, brunch or lunch.
1 cup parsley leaves (no stalks)
2 slices French bread, toasted
2 poached eggs
2-3 cherry tomatoes, halved
Heat a little water in a saucepan, add parsley and stir fry for 2-3 minutes. Drain well.
Place toast on plates and spread with parsley.
Top with a poached egg and chives.
Garnish with tomatoes and serve.
