Red cabbage slaw

A great way to get plenty of coloured vegetables at any time during the year.

Red cabbage slaw


Serves 4

¼ red cabbage, finely sliced
1 cup diced capsicum, red, yellow, green
¼ telegraph cucumber, sliced
¼ cup vinaigrette
2-3 coriander sprigs



Place the cabbage in a serving dish.
Add the capsicum and cucumber and mix.
Serve, drizzled with vinaigrette and garnished with coriander.
