Red cabbage with fruity mince
Use as part of a tapas selection or as a tasty family dish.
canola oil spray
500g lean beef mince
½ cup capsicum and apricot or tomato chutney
½-1 cup water
8 red or green raw cabbage leaf ‘boats', trimmed
coriander sprigs for garnish
Heat a heavy-based frying pan, spray with oil, add mince and brown all over.
Add chutney and water and simmer for 15-20 minutes or until mince is tender and mixture is thick.
Serve in cabbage leaf boats, garnished with coriander.
