Easy and delicious and so stunning in red bowls.

Red heart salad

Ingredients

Serves 6-8

1 bowl beetroot salad
1 bowl red lettuce
1 bowl chopped red radishes
1 bowl sliced red cabbage, garnished with grated carrots

Beetroot salad:
2 beetroot, boiled, peeled and chopped
3 Tbsp olive oil
1 tsp sugar
1 Tbsp red wine vinegar
¼ tsp mustard powder

Method

Place beetroot in a bowl.
Combine oil, sugar, vinegar and mustard powder in screw top jar. Shake to combine.
Pour over the beetroot and leave for several hours to marinate.
Serve.
