Red onion, cucumber and bean salad

A delicious summer salad.

Red onion, cucumber and bean salad

Serves 4-6

300g green beans, ends removed
¼ cup olive or canola oil
2 Tbsp red wine or white vinegar
1 clove garlic, peeled and crushed
pinch salt
freshly ground black pepper, to taste
1 red onion, peeled and sliced
½ telegraph cucumber, halved, deseeded and sliced
4 tomatoes, sliced

Bring a large pot of water to the boil, add green beans and simmer for 3-5 minutes or until bright green in colour. Drain and place in iced water.
To make dressing, combine oil, vinegar, garlic, salt and pepper in a screw top jar and shake well to mix.
Drain beans and place in a bowl. Add onion, cucumber and tomatoes.
Add dressing, gently toss and place on a serving dish and serve.
