Add orange juice to gravy or jus to make this an elegant meal.

Roast potatoes with duck legs, broccolini and orange

Ingredients

Serves 2

2 duck legs (thigh and drumstick)
2-3 baking potatoes, sliced into pieces or chunks
pinch salt
freshly ground black pepper, to taste
4-6 florets broccolini, steamed
orange segments, for garnish

Method

Preheat oven to 200°C.
Heat an ovenproof pan over medium heat. Brown duck legs until skin turns golden.
Place pan in preheated oven and cook for 20 minutes.
Remove pan from oven, arrange potatoes around duck legs, add salt and pepper, and return to oven.
Roast for 35-45 minutes, turning potatoes occasionally, until duck legs are tender and potatoes crisp and golden and tender when pierced with a knife.
Separate duck leg into thigh and drumstick for serving.
Serve with broccolini and garnish with orange segments.
