Roast potatoes

Roast potatoes are hard to resist and are delicious any time - be sure to use potatoes labelled for roasting.

Roast potatoes

1 medium-large roasting potato per person
canola oil spray
herbs: rosemary and/or thyme optional
seasoning mix, Tuscan, optional

Preheat oven to 220ºC
Scrub or peel potatoes and slice into large even-sized chunks.
Spray baking dish with oil and place in preheated oven to heat.
Remove dish from oven, add potatoes and spray lightly with oil, sprinkle with herbs or seasoning and mix to coat.
Bake in oven for 35-40 minutes, or until golden and crisp and potatoes are tender when pierced with a knife.
Turn several times during cooking.
Remove from oven and serve.

Tip: place potatoes in a baking dish that is large enough to spread them out in a single layer.
