Roast pumpkin on iceberg
Add a range of salads to the meal table.
¼ crown pumpkin, deseeded and sliced into 4 slices
¼ iceberg lettuce, finely sliced
¼ cup spicy plum sauce
Preheat oven to 180˚C.
Spray pumpkin slices on both sides with canola oil and place in a baking dish.
Bake in preheated oven for 40-45 minutes or until pumpkin is soft when pierced with a knife.
Remove from oven.
Serve on iceberg lettuce drizzled with spicy plum sauce.
