Roasted orange and vanilla beetroot

Vanilla paste is an ingredient which adds a great flavour and smoothness to a dish.

Ingredients

Serves 4

4 beetroot, trimmed and quartered
½ cup orange juice
1 Tbsp minced fresh ginger
1 tsp vanilla paste
1 cup salad greens

Method

Preheat oven to 180°C.
Place beetroot in a baking dish.
Mix orange juice, ginger and vanilla paste together in a small bowl and pour over the beetroot.
Place baking dish in preheated oven and bake for 20-30 minutes or until beetroot are tender when pierced with the tip of a knife.
Baste the beetroot occasionally during cooking.
Remove from oven and serve on salad greens.

Tip: Use 1-2 Tbsp maple syrup in place of the vanilla paste.
