Ingredients

Serves 2

1-2 cups rocket
1 beetroot, cooked, sliced
1-2 celery stalks, sliced
1 yellow capsicum, deseeded and sliced
1-2 Tbsp vinaigrette
¼ cup pea shoots

Method

Arrange rocket, beetroot, celery and capsicum on a plate.
Drizzle with vinaigrette and top with pea shots.
Serve.

Variation: Use red, orange or green capsicum in place of the yellow capsicum.
