Tomatoes with mozzarella and basil - yum!

Salad ciabatta roll


Makes 4

4 long ciabatta rolls
¼ cup hummus
4 tomatoes, sliced
100g mozzarella cheese, sliced
8 basil leaves
½ cup salad leaves
¼ cup aioli, optional


Split rolls in half and spread both sides with hummus.
Place the bottom of the roll on a plate.
Top with tomatoes, mozzarella, basil and salad leaves.
Drizzle with aioli if using.
Add the top of the roll and serve.
